Recipe Ingredients for Potato Pancakes

2 cups potatoes, mashed
1 egg, beaten
1/2 tsp salt
1 1/2 oz Cheddar cheese
1 tbsp butter
1/2 cup milk, 2%

Recipe Directions for Potato Pancakes

  1. Mix together potatoes, milk and butter (or use leftover mashed potatoes prepared as indicated.)

  2. Add beaten egg, salt and cheese.

  3. Spray a large griddle/pan at medium heat with non-stick spray.

  4. Drop potato mixture onto griddle ¼cup at a time. Flatten with a spatula to ½ inch thick.

  5. Fry approx 5 miutes on each side, until brown. Serve hot.
