Recipe Ingredients for Potato Pancakes

2 pounds potatoes, flesh without skin, quartered
1 large onion, quartered
1/2 cup skim milk
1/2 cup whole wheat flour
2 tsp salt
2 eggs

Recipe Directions for Potato Pancakes

  1. Grate the potatoes and onions in a bowl and add milk. Stir.

  2. Add the rest of the ingredients and mix until smooth.

  3. In a skillet with oil, drop 1/4 cup of batter and fry until golden brown and crisp.

  4. Drain on paper towel.
