A tasty hearty soup, made without stock since it makes its own. Add some no fat sour cream and a sprinkle of green onions to make it more interesting. You should add pepper or hot sauce to taste.

Recipe Ingredients for Potato, Onion, Leek and Asparagus Soup - Weekly Soup Series

12 cloves garlic
1 (481g) onion
1 (202g) leeks
1 (338g) potato
4 cups Asparagus
14 cups water
2 tbsp Olive Oil

Recipe Directions for Potato, Onion, Leek and Asparagus Soup - Weekly Soup Series

  1. Finely chop the garlic and brown in olive oil in a stock pot.

  2. Coarsely chop onion, leeks and potato and add with water to the pot and bring to a boil.

  3. Slice off the bottom half inch of the asparagus and discard.

  4. Slice the tops off and set aside.

  5. Slice in small pieces the remaining asparagus and add to the pot and set pot to simmer.

  6. Simmer for one hour or until vegetables are soft.

  7. Remove from heat and let cool.

  8. Process in food processor to smoothness desired.

  9. Cook remaining tops by microwaving or lightly boiling them for 3-5 minutes.

  10. Add them back to the smoothed soup.
