Recipe Ingredients for Potato and Mushroom Lenten Soup

6 russet potatoes
10 oz portabella mushrooms
1 quart vegetable broth
2 tbsp chopped shallots
2 tbsp oil
1 tsp salt
1 tsp pepper

Recipe Directions for Potato and Mushroom Lenten Soup

  1. In a large soup pot, heat the oil until quite hot. Saute shallot for two minutes, then add the mushrooms and cook until moistened, about 5 minutes more.

  2. Add potatoes and season with salt and pepper. Add the stock and bring to a boil, then reduce to simmer. Cook for 30 minutes.

  3. Puree in a food mill or blender until smooth, then adjust seasoning.
