Indian-style, potato/cream-based soup.

Recipe Ingredients for Potato Mulligatawny Soup

1 sweet onion
2 stalks celery
1 carrot
2 tsp roasted garlic
1 Curry to taste
4 cups chicken broth
1 small apple
1 small potato
1 chicken breast
1 salt to taste
1 Red pepper flakes to taste
1 pinch basil or thyme
1/2 cup heavy cream
1/4 cup flour
1/4 cup butter
1/2 cup frozen spinach

Recipe Directions for Potato Mulligatawny Soup

  1. Saute onions, celery, garlic, carrot, potato and butter in a large soup pot. Add flour and curry, and cook 5 more minutes.

  2. Add chicken stock, mix well, and bring to a boil. Simmer about 30 minutes.

  3. Add apple, chicken, remaining spices and additional curry to taste. Simmer 15 minutes.

  4. Add cream and spinach and continue adding curry to taste when soup is completely cooked
