Note: I am on a low sodium diet so I do not add salt.b I see it even when you enter the water. So I try very hard to keep it low. Add it if you wish. I added the olive oil to give the soup more balance.

Recipe Ingredients for Potato-Leeky Soup

4 cup Leeks, (Bulb And Lower Leaf-portion)
1 large Onions
4.5 cup chopped raw Yukon Gold Potatoes
1 serving Ground Red Pepper Spice
1 tsp Nutmeg, Ground
0.3 tsp Nutmeg, Ground
1 tsp Parsley, Dried
2 tsp Garlic
8 cup (8 fl oz) Water

Recipe Directions for Potato-Leeky Soup

Chop all vegetables and add to the 6 cups water. Boil until vegetables are tender. Add spices and olive oil. Puree until the vegetables are emulsified. Add milk simmer for another 20 minutes.
