Potato and Leek Soup Recipe

A modified version of the one found at the Rose and Crown Pub in EPCOT.

Recipe Ingredients for Potato and Leek Soup

64 ounces chicken stock
32 ounces half and half
2 pounds leeks
1 large onion
8 medium potatoes
1/4 teaspoon white pepper
1 teaspoon salt

Recipe Directions for Potato and Leek Soup

  1. Peel and wash potatoes. Chop the potatoes up into chunks.

  2. Cut the dark green tops on the leeks, split them in half, length wise and rinse under cold water to get out the dirt that gets stuck behind the leaves.

  3. Dice the onion.

  4. Place a large stock pot on medium heat and add the butter. When the butter has completely melted, add the leeks and onion. Cook for 5-10 minutes, stirring occasionally.

  5. Add chicken stock, half and half, and potatoes to the pot. Bring to a boil then reduce to medium-low and simmer until potatoes or soft. Add salt and pepper to taste.

  6. Using an immersion blender, puree the soup until it is smooth. Serve warm with salad and fresh bread or rolls.
