Recipe Ingredients for Potato and Leek Soup

3 tablespoons butter
1 onion, chopped
1 1/2 cups leeks, white part and a little green
2 Yukon Gold potatoes
1 stalk,+large+11"-12"+long celery
6 cups low sodium chicken stock
3 tsp,+crumbled bay leaves
1 teaspoon fresh thyme
1 tablespoon lemon Juice
1 pinch Salt and pepper
1 carrot
1/3 cup table cream

Recipe Directions for Potato and Leek Soup

  1. 3 tablespoons butter

  2. 1 onion, chopped

  3. 1 1/2 cups leeks, white part and a little green, sliced thinly

  4. 3 Yukon Gold potatoes

  5. 6 cups chicken stock

  6. 3 bay leaves

  7. 2 sprigs of fresh thyme

  8. 1/2 Juice of 1/2 lemon

  9. Salt and pepper

  10. Directions:

  11. Heat the butter in a large soup pot over medium high heat. Add onions and leeks and sauté until soft, about 3 minutes. Add potatoes, season and stir, coating well with melted butter. Add the stock, bay leaves and thyme and cook until potatoes are very soft. Puree soup in a blender or food processor, adding lemon juice and seasoning to taste.
