8 medium Russet Potato
24 serving Evaporated Milk Skim Fat Free
2 medium raw Leeks
1 tbsp Salted Whipped Butter

Recipe Directions for potato leek soup

  1. peel, cube and boil potatoes. drain.

  2. thinly slice and saute leeks in butter until soft - do not brown.

  3. add leeks and evap. skim milk to potatoes.

  4. blend until smooth with stick blender.

  5. add salt and pepper to taste.
