Gluten-free, dairy-free potato leek soup.

Recipe Ingredients for Potato Leek Soup

6 cup Organic Chicken Broth
3 leek Leeks, (Bulb And Lower Leaf-portion)
3 large (3" to 4-1/4" dia.) Potatoes, Boiled
9 tsp Becel Regular Margarine

Recipe Directions for Potato Leek Soup

  1. Slice leeks lengthwise and wash thoroughly before chopping.

  2. Wash, peel, and potatoes.

  3. Saute leeks in margarine.

  4. After leeks go limp, add potatoes and saute for 5 min more.

  5. Add 6 cups chicken broth and bring to boil.

  6. Simmer covered for 35 min.

  7. Remove from heat and pure with immersion blender.

  8. Add salt and pepper to taste by the bowl.
