Recipe Ingredients for Potato and Leek soup

4 cups leeks, thinly sliced
4 cups chicken broth
2 large potatos
1/2 tsp pepper
1/2 lb bacon
1/4 cup fat free sour cream
2 stalks celery
1 cup mushrooms, sliced

Recipe Directions for Potato and Leek soup

  1. Use pam cooking spray in a large sauce pan over medium heat. Saute leeks and celery for 5 mins, stirring occassionally. Add broth, pepper,potatoes, and mushrooms. Bring to a boil over medium high heat.

  2. Reduce heat, cover and simmer for 15 minutes, Until veg. are tender. Stir in bacon and sour cream. Season to taste with salt and pepper.
