Recipe Ingredients for Potato-Leek Soup

1 tbsp canola oil
1 lb red potatoes
3 cups milk
3 cups kale
3 cups leek
1/2 tsp salt
1/2 tsp nutmeg

Recipe Directions for Potato-Leek Soup

  1. Recipe uses 1% milk and red potatoes.

  2. Chop kale and leeks.

  3. Chop potatoes into golfball-sized chunks -- do not peel.

  4. Place on microwave-safe plate and cover with wax paper. Microwave on high for 6-8 minutes or until potatoes are tender.

  5. While potatoes are cooking, add the oil to a pot. Heat on Medium for 1 minute.

  6. Add kale, leeks and salt to pot. Cover and cook on medium-low heat for approx 5 mins. Stirring occasionally until leeks are soft.

  7. Add milk, nutmeg and potatoes. Heat covered on High for 2 minutes. Stir. Then cover and simmer on low.

  8. Use a potato masher or large spoon to mash potatoes in the soup.

  9. Add pepper to taste.
