Rich potato soup with no milk or cream!

Recipe Ingredients for Potato Leek Soup

5 pounds white potatoes
6 cups chicken broth
2 leeks
1/2 cup butter
1/4 cup white wine
1 salt
1/4 teaspoon pepper

Recipe Directions for Potato Leek Soup

  1. Cook potatoes in chicken stock until soft; drain and set aside.

  2. Put potatoes in a food processorusing chicken stock from cooking pot and puree until smooth.

  3. Half the leeks lenghtwise, and soak in water. Slice fine and saute in butter until transparent. Add white wine, cook 3 minutes.

  4. In soup pot, combine remianing chicken stock, and suateed leeks. Stir in pureed potatoes and simmer. Season with sale and pepper. Cook to desired consitatancy; garnish with fresh parsley and serve with warm bread.
