Potato Leek Soup Recipe

The onions were actually leeks but the data base didn't know. The original receipt called for 1/2 c cream and 3 tbsp butter. It's quick and super easy, but somewhat bland. Try adding garlic, celery seeds.

Recipe Ingredients for Potato Leek Soup

1 pound white potatoes, peeled and diced fairly small
2 onions
5 cups water
2 teaspoons salt
4 tbsp butter
1 Freshly ground black pepper
1/4 cup cilantro

Recipe Directions for Potato Leek Soup

  1. Place potatoes, leeks, water and salt in a large cooking pot.

  2. Bring to a boil; reduce heat and simmer, covered, for about 30 minutes or until the vegetables are very tender.

  3. Use a food processor to puree the soup in batches, then return to cooking pot. Bring pureed soup back to a simmer then remove from heat. Add butter and stir well. Season to taste with salt and pepper. Place in serving bowls and garnish with chives.
