Full of flavor and texture, but just 156 calories per bowl!

Recipe Ingredients for Potato Leek Soup

1 cup of leeks, chopped (Trader Joe's has frozen)
3 small red potatoes, cubed (510 grams)
3 cups fresh water
1 chicken bouillon cube
2 tbls half and half
1/2 tbls Thyme
1 tsp salt
1/2 tsp black pepper

Recipe Directions for Potato Leek Soup

  1. in large saucepan, combine first four ingredients. Cover and simmer until potatoes are soft.

  2. Remove, and puree with blender or immersion blender (best, as can be done in pan).

  3. Reheat to desired temp, then remove and add half and half, thyme, salt and pepper.

  4. Ladle into three of the same sized bowls, dividing equally.

  5. Salt and pepper, or add more thyme to suit each persons taste.

  6. So low cal/fat, you can serve with a nice chunk of rustic bread.
