Recipe Ingredients for Potato-Leek Soup

4 yukon gold potatoes, peeled and diced
4 leeks, cleaned and chopped, white and light green parts only
1 large onion, chopped
1 c ham, diced
5 cups low sodium chicken broth
1/4 tsp black pepper
2 tablespoons fresh chives, chopped

Recipe Directions for Potato-Leek Soup

  1. Bring the potatoes, leeks, onion, broth, ham, and pepper to a boil in a large saucepan.

  2. Reduce the heat; cover and simmer until the vegetables are tender, about 25 minutes. Let the mixture cool about 10 minutes.

  3. Puree in batches in a blender or food processor.

  4. Return the puree to the saucepan and heat through; stir in the chives.
