Recipe Ingredients for Potato leek soup

1 cup carrots, chopped
2 celery stalks, chopped
1 cup onions, chopped
3 leeks, sliced thin
1 cloves of garlic
5 cups water (homemade chicken or vegetable broth)
1 pound potatoes, cubed
1 tbs light butter with canola oil blend

Recipe Directions for Potato leek soup

  1. Saute all vegetable except potatoes until tender

  2. add to boiling stock and add potatoes

  3. Simmer about 10-15 minutes until potatoes are tender
