Nice, low calorie spring time soup.

Recipe Ingredients for Potato Leek Soup

4 carrots
5 medium russet potatoes
3 tbsp olive oil
1 large leek
1 med onion
5 cloves of garlic, chopped
2 cups milk
2 tbsp salt
2 tsp black pepper

Recipe Directions for Potato Leek Soup

Saute all the ingredients (except the milk and salt and pepper) together until the onion looks like it is done. Then add milk, salt and pepper and enough water to fill the pot to the top. Then you boil long enough to cook all the veggies to a soft stage and then stick your immersion blender in and blend it up and then it is done.
