I found this in the Julia Child's cook bood and madified it te be a little healthier.

Recipe Ingredients for Potato Leek soup

4 cup leeks, sliced
4 cups potatoes, diced
2 cups chicken stock
4 cups water
1 cup sour cream
1 tsp salt
1 tsp pepper

Recipe Directions for Potato Leek soup

  1. Slice the leeks-dont forget to wash off the dirt that is between the layers

  2. Dice the potatoes, your choice about the skins, I like them

  3. Saute the leeks with a little PAM or olive oil until they are tender

  4. Add potatoes, chicken stock and water.

  5. Simmer 45-50 minutes until potatoes are cooked, add salt and pepper

  6. Add sour cream, it gives it a nice punch and creamyness without the calories.

  7. Mash the soup a little to give it a thicker texture, but don't puree the soup in a blender

  8. Enjoy- you might have to adjust the salt as potatoes absorb salt quickly
