Recipe Ingredients for Potato Leek Soup

3 leeks, chopped
2 cans chicken broth
1 medium potato, sliced
1 1/2 tsp butter
1/4 tsp white pepper
1/2 tsp kosher salt

Recipe Directions for Potato Leek Soup

  1. Wash leeks, chop coarsely

  2. Saute leeks in butter over low heat, cover and cook 10 minutes.

  3. Add broth, potatoes, salt and pepper, bring to a boil over high heat

  4. Reduce heat to low, cover, and simmer 20-30 minutes.

  5. Serve hot, or blend and serve chilled.
