This soup is a great compliment with salad or a sandwich

Recipe Ingredients for Potato Leek Soup

3 cups leeks (sliced thin)
3 cups potato (about 2 medium grated)
6 cups vegetable broth
1/2 cup soy creamer

Recipe Directions for Potato Leek Soup

  1. Saute the leeks in about 1/4 cup of water for about 5 minutes

  2. Add vegetable broth and potato

  3. Bring to a simmer for about 30 minutes until potato is cooked

  4. Blend until smooth with a stick blender or you can use a regular blender and do batches. Leave some chunks if you like

  5. Add the soy creamer and serve
