Hearty and nutritious soup, great for the cold winter nights. No cholesterol, low fat and with no added salt it can be low sodium. I use free range chicken broth from Kroger. Only 70mg sodium per serving.

Recipe Ingredients for Potato leek soup

4 potatoes large
1 cup leeks
1/2 cup green onion
1/2 cup celery
10 oz corn, sweet, yellow
4 cups low sodium chicken broth
1 cup fat free half and half
1 tsp black pepper
1/4 tsp nutmeg

Recipe Directions for Potato leek soup

  1. Chop up the leeks, celery and green onions and cook with a little broth until tender.

  2. Add the rest of the broth and potatoes. I like to bake the potatoes first.

  3. Cook until about half of the liquid is evaporated and potatoes are done.

  4. Add the corn and cook for about 5 min.

  5. Add the half and half and the nutmeg, bring to a simmer stirring often to keep the half and half from separating.

  6. salt and pepper to taste.
