Variation: For creamy vegetable soup, add about 2 cups puréed or diced cooked vegetables, such as broccoli, cauliflower, carrots, or chopped tomatoes to the soup base. Strain the purée before adding in to the soup base. Omit the milk if desired.

Recipe Ingredients for Potato-Leek Soup

4 russet potatoes, scrubbed
3 tablespoons butter
3 leeks (about 3 cups)
4 cups organic vegetable broth
2 cups water
1/2 tsp salt
1 cup nonfat milk
1/2 tsp pepper
3 tbsp fresh chives

Recipe Directions for Potato-Leek Soup

  1. Peel and dice potatoes into 1 inch chunks.

  2. In a heavy 3-quart sauce pan, melt margarine over medium heat. Add leaks; sauté until softened, about 5 minutes.

  3. Add potatoes, broth, water, and salt. Simmer, partially covered until potatoes are tender, about 45 minutes.

  4. Remove from heat. Cool slightly.

  5. In a blender or food processor fitted with the metal blade, process potato mixture until smooth.

  6. Return potato mixture to saucepan. Add milk and pepper. Cook over medium heat until heated through, about 5 minutes.

  7. Ladle soup into serving bowls. Garnish with chives, serve immediately.
