A fairly easy soup to cook up on a chilly day.

Recipe Ingredients for Potato Leek Soup

3 tbsp butter
5 leeks, sliced
2 cloves of garlic, chopped
1 tsp salt
4 medium potatoes, chopped
1 tsp pepper
1 cup milk

Recipe Directions for Potato Leek Soup

  1. Melt butter in a 4 qt. saucepan over medium heat. Add leeks, garlic, and 1/2 tsp. salt. Cook 5-10 minutes, until leeks are soft.

  2. Add potatoes, pepper and 4 cups of water. Bring to a boil.

  3. Reduce heat to low and simmer 30 minutes or until the potatoes are tender.

  4. Blend soup using an immersion blender or by (carefully) processing in a stand blender.

  5. Add milk and stir. Return to low heat if desired. Enjoy!
