Belgian potato and leek soup - hearty and healthy

Recipe Ingredients for Potato and leek soup

525 g leeks
1100 g potatoes
1 onion
1500 ml beef stock
50 g unsalted butter
1 tbsp salt
1 tsp pepper
3/4 cup milk

Recipe Directions for Potato and leek soup

  1. trim and wash leeks

  2. slice leeks and onion

  3. peel and dice potatoes

  4. heat pan with butter

  5. brown onion and leeks

  6. add potato to pan

  7. add stock (all)

  8. bring to boil

  9. cover with lid, simmer 40 minutes

  10. stir in milk when ready to serve
