Recipe Ingredients for Potato Leek Soup (Cooking Light)

6 yukon gold potatoes, chopped
3 leeks, chopped
6 cups chicken broth
2 ounces bacon

Recipe Directions for Potato Leek Soup (Cooking Light)

  1. Fry two slices of bacon in your pot until crispy.

  2. Add chopped leek. Cook until soft.

  3. Add potatoes, chicken broth, and 1/4 teaspoon thyme and salt.

  4. Bring to a boil and simmer 15 minutes.

  5. When potatoes are soft-soup is done.

  6. (Optional) Use hand blender to blend soup until creamy.
