1 tbsp Olive Oil
474 grams Leeks, (Bulb And Lower Leaf-portion)
487 grams Onions
111 grams Garlic
12 grams Salt Substitute
883 grams Potato, Flesh And Skin

2 cup Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for Potato Leek Soup with Chicken

  1. Easier Ingredient List

  2. 2 large Leeks

  3. 2 red onions

  4. 2 bulbs of garlic (20-30 cloves)

  5. 1 Tbsp of Olive Oil

  6. 1 Tbsp Salt Substitute, I used Mortons

  7. 2 huge potatoes

  8. 2 packages of boneless, skinless chicken thighs 2.5 lbs

  9. 12 cups water

  10. 2 cups milk

  11. Chop up the leek, I sliced rounds up to the leaves. Chop up the onions. Peel the garlic.

  12. Heat the olive oil in the bottom of the soup pot, add in the leeks, onions and garlic. Sautee until soft, 10-15 minutes stirring frequently. You can stir it and let it sit for a few minutes, then stir it again, just don't let the bottom vegies burn.

  13. Chop up the potatoes, I left the skin on.

  14. When the vegetables are soft, add the water, salt substitute and potatoes and boil, then simmer for 40 minutes. So bring the water to a boil, then reduce the heat and simmer. Stir occasionally.

  15. Chop the chicken into inch size pieces while the soup is cooking.

  16. Get a big bowl and blender a portion of the soup until smooth, then transfer to the bowl. Repeat until all the soup is blended smooth.

  17. Return to soup pot, carefully

  18. Add chicken and cook for 30 minutes over a slightly less than medium heat. Stir occasionally to keep bottom from burning.

  19. Add milk, stir, and allow to cool.
