Simple and delicious - be sure to wash the leeks well.

Recipe Ingredients for Potato Leek Soup - 1 cup

5 cups potato, cubed, peeled, yellow
5 cups leeks, chopped and rinsed well
2 large onions, chopped
3 tbsp canola oil
5 cups water - to just cover
1 1/2 tsp salt
1/4 tsp ground pepper
1/8 tsp nutmeg

Recipe Directions for Potato Leek Soup - 1 cup

  1. Heat oil in heavy pot - add potatoes, leeks and onions.

  2. Cook covered over med/low heat 10 minutes, stirring occasionally.

  3. Add water, salt and pepper and bring to gentle boil for 10-15 minutes - until potatoes are not crunchy.

  4. Add nutmeg or serve with a pinch of nutmeg on top.
