Recipe Ingredients for Potato Leek Soup 1/2 cup

5 cups water
5 cups potato, diced, peeled
5 cups leek, diced, washed well
2 large onions, large
1 1/2 tsp salt, kosher
3 tbsp canola oil
1/4 tsp ground pepper
1/8 tsp nutmeg

Recipe Directions for Potato Leek Soup 1/2 cup

  1. put equal amounts diced potato and leeks in oil with diced onion

  2. simmer and stir a few minutes

  3. add salt and enough water to barely cover

  4. Simmer until potatoes are done - about 15 minutes

  5. add nutmeg and serve

  6. or put in bowls and sprinkle a bit of nutmeg on the top

  7. black pepper to taste
