Recipe Ingredients for Potato, Leek and Carrot Soup

3 tbs unsalted butter
3 leek
4 carrots
4 russet potatoes
1 tbs celery seed
1 tbs fresh ground pepper
1/2 tbs ground sage
4 cups chicken broth

Recipe Directions for Potato, Leek and Carrot Soup

  1. Chop potatoes into cubes and leeks and carrots into rounds (the carrots should be smaller rounds).Add butter to large heavy bottom pot. Then add the chopped leeks and carrots and let saute for about 2-3 minutes. Next add celery seed, pepper, and sage and stir for another 2 minutes. The cubed potatoes, chicken broth and bay leafs are then added. Bring mixture to a boil, put a tight fitting lid on and turn down to low. Cook for about 30 minutes. Meanwhile steam the other two whole potatoes for about 15 minutes, when tender remove from heat let cool and chop into cubes. (Note* If you want the whole soup to be creamy then there is no need to steam the two potatoes, just cube them and add them with the others.)

  2. Once the soup has cooked for thirty minutes use a stick blender and puree the entire batch. Once finished taste and adjust with some pepper and salt. Add the chopped cooled potatoes and let sit for about ten minutes before serving. Best served with cheese in the soup melted, a bit of yogurt if the soup is all creamy or some crusty bread. Also if you?d like the soup to be lighter then add 1 to two cups of water.
