When chilled, this soup is vichysoisse. When hot, it is simply potato leek soup, a smooth, creamy treat. Bacon adds a smoky tinge. but may be omitted if one's clothes are feeling a bit tight - in that case, delete 20 calories per serving.

Recipe Ingredients for Potato Leek Bacon Soup

4 leek
1 onion
4 clove garlic
4 potato
4 oz bacon
2 cup chicken stock
2 cup milk
1 tsp salt
1 tsp white pepper
1 oz butter

Recipe Directions for Potato Leek Bacon Soup

  1. Roughly chop white part of large leeks, rinse dirt, discard green parts. Peel and chop garlic and medium onion. Quarter potatoes, russets are preferred. Chop bacon.

  2. Volume of potato should be equal to or less than volume of leeks.

  3. Cook bacon pieces until barely brown and beginning to render fat.

  4. Add leeks, onions, garlic and butter, cook all in bacon fat.

  5. Add chicken stock, low-sodium preferred, and milk. Bring to boil, stirring to prevent scorching at bottom of pot. Reduce heat and simmer for 30 minutes.

  6. Working in batches, move solids to blender and puree smooth.

  7. Add liquid to puree as needed to reach desired consistency. You may not need all the liquid.

  8. Salt and pepper to taste.

  9. Notes:

  10. Bacon is optional and non-traditional. If using bacon, added salt may not be needed.

  11. For a touch of heat, add wasabi or horseradish, tasting as you go.

  12. Butter is also optional. Olive oil may be used, or neither.

  13. Milk may be whole or reduced fat. This soup is traditionally made with a cup of cream, which you may add for extra body.
