Potato Latkes Recipe

Makes 6 servings



Please substitute matzo meal for the flour, if possible. For Channukah, serve with the traditional sour cream and applesauce on the side.

Recipe Ingredients for Potato Latkes

4 eggs
1 lb onions, minced
1 lbs russet potatoes, peeled
1/2 c flour
1/3 c salad oil
1 salt and pepper

Recipe Directions for Potato Latkes

  1. In a large bowl, mix eggs and onions, set aside. Using a food processor or hand grater, coarsley shred potatoes. At once, add potatoes and meal to bowl; stir.

  2. Put about 1 T oil in a 10- to 12" nonstick frying pan over medium heat. Into hot pan, ladle about 1/4 cup potato mixture for each latke; spread into a 3-1/2" round. Cook 2 or 3 at a time until golden and crisp on both sides, 6 to 8 minutes total; add oil to prevent sticking. Drain on paper towels.

  3. When all are cooked, lay them in a single layer on 12 X 15 baking sheets. If made ahead, cover and chill up until next day. To reheat and crisp, bake latkes, uncovered, in a 425-degree oven until sizzling hot, 10 to 15 minutes if room temperature, 15 to 20 minutes, if chilled. Add salt and pepper to taste.
