Recipe Ingredients for Potato Latkes

2 cups potatoes, peeled and shredded
1 tablespoon onion, grated
2 tablespoons all-purpose flour
3 eggs, beaten
1 1/2 teaspoons salt
1/2 cup canola oil

Recipe Directions for Potato Latkes

  1. Place the shredded potatoes in a cheesecloth and wring, extracting as much

  2. moisture as possible. Alternatively, put the potatoes on a plate and pat dry with a heavy duty paper towel.

  3. In a large bowl mix the potatoes, onion, eggs, flour and salt together.

  4. Heat the oil until hot, in a large heavy skillet.

  5. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties.

  6. Brown on one side, flip and brown on the other. Let drain on paper towels. Serve hot!
