Very tasty, healthy alternative to traditional pasta lasagna.

Recipe Ingredients for Potato Lasagna

2 tbsp extra-virgin olive oil
2 large onions, halved and thinly sliced
2 garlic cloves, minced
1/2 tsp dried oregano
2 large russet potatoes, peeled and thinly sliced
1/2 cup Tomatoes, Sun-dried; (softened according to package directions and chopped)
2 oz oil-cured black olives (Kalamata), pitted and halved
15 oz canned tomatoes (whole, peeled)
8 oz ground chicken (Italian sausage)
1/4 cup low fat cheddar cheese

Recipe Directions for Potato Lasagna

  1. Preheat oven to 375 degrees. Lightly oil a 9-inch square baking dish or a deep-dish pie plate.

  2. Heat a large skillet over medium heat and add 1 tablespoon oil. Add onions and cook, stirring often, until onions are softened and golden, about 10 minutes. Add garlic and oregano and cook, stirring, for 1 minute more.

  3. To assemble the lasagna, divide the potatoes into three piles. Arrange the first third of potatoes, overlapping, in the baking dish, taking from other piles to be sure to cover bottom. Sprinkle lightly with salt and pepper to taste and drizzle with 1/2-tablespoon oil. Spread half of onions over the potatoes, followed by half of the dried tomatoes, olives, crushed tomatoes, and sausage. Add the next layer of potatoes, overlapping, and the remaining half of dried tomatoes, olives, crushed tomatoes, and sausage. Use the third pile of potatoes to cover the top.

  4. Sprinkle top layer of potatoes with the cheese and drizzle with remaining 1/2-tablespoon oil. Cover with foil and bake for 1 1/4 hours, or until potatoes are tender. Uncover and bake for 10 minutes more, until browned.
