Recipe adapted from Manischewitz potato pancake box. For Passover, or for a more authentic recipe, use matzo meal instead of bread crumbs.

Recipe Ingredients for Potato kugel

6 oz Potato Pancake Mix
2 eggs
2 cups water
1/4 cup vegetable oil
1/4 cup breadcrumbs

Recipe Directions for Potato kugel

  1. Beat eggs until blended.

  2. Add water and vegetable oil; mix well.

  3. Stir in potato pancake mix and breadcrumbs (or matzo meal).

  4. Allow batter to thicken for 3 minutes. Spread in a well-greased 8"x5"x1.25" baking pan.

  5. Bake in pre-heated oven at 450 degrees for 1 hour or until brown as desired.
