1.5 cup, chopped Peppers, Sweet, Red
1 medium raw Onion Yellow
1 cup Spinach
0.5 serving Extra Virgin Olive Oil

Recipe Directions for Potato Kielbasa Skillet

Chop potatoes into cubes and boil until almost soft. Drain and set aside. Meanwhile, in a large skillet, add olive oil. When hot, add chopped onion, chopped bell pepper, and chopped garlic. Saute until soft. Add potatoes and stir occasionally, letting potatoes brown. When potatoes are starting to brown, add in kielbasa and chopped spinach. Stir occasionally until everything is warmed through and a fork pierces potatoes easily. Serve hot.
