A hearty soup, takes the chill off.

Recipe Ingredients for Potato Kale soup

2 large russet potatoes
1 large onion, chopped
3 tsp garlic, minced
2 red bell peppers, roasted
1 jalapeno pepper, roasted
6 cups water
3 carrots, chopped
1 tbs fresh rosemary, chopped
1 tsp nutmeg
1 lb kale, stems removed, leaves chopped

Recipe Directions for Potato Kale soup

  1. Chop the onions, garlic and rosemary, place in a heavy pot with a small amount of water, saute' until they're translucent.

  2. Chop the potatoes to 1/2" dice, add to pot.

  3. Chop the peppers and carrots, add to pot.

  4. Add the rest of the water and bring to a boil.

  5. Simmer until potatoes are soft.

  6. When the potatoes are done, add the kale leaves, and heat until wilted.

  7. Goes great with a crunchy bread.
