Recipe Ingredients for Potato and Greenbean Salad

1 lb green beans
1 lb red potatoes
2 tbsp olive oil
2 tbsp lemon juice
1 tsp minced garlic
1 tsp salt
1 tsp pepper
1 tsp apple cider vinegar
3 oz bacon, cooked
2 tbsp chopped chives
2 tbsp chopped parsley
1/4 cup parmesan cheese

Recipe Directions for Potato and Greenbean Salad

  1. Cook green beans til crunchy tender. Boil potatoes til fork tender. Splash of vinegar in water keeps them bright red in color. Drain both and set aside to cool.

  2. Combine olive oil, lemon juice, minced garlic, salt, pepper and vinegar in a mason jar. Cap and shake vigorously. set aside.

  3. Cut potatoes into quarters. Cut beans in half. Combine in bowl with crumbled bacon, chives, parsley and dressing mix. Toss. Add parm cheese and toss again. Serve room temp.
