Recipe Ingredients for Potato, garlic and tomato fritata

6 eggs
1/2 c parmesan cheese
1 1/2 T olive oil
4 cloves garlic
2 c grape tomatoes
9 oz potatoes

Recipe Directions for Potato, garlic and tomato fritata

  1. Use oven proof skillet

  2. heat half T olive oil, saute garlic, set aside

  3. heat half T olive oil, saute potatoes till done, set aside

  4. heat half T olive oil, saute tomatoes, add potatoes and garlic.

  5. Mix eggs and 1/2 cheese. pour over vegetables

  6. sprinkle the rest of cheese on top. cook little while on top of stove, then put in oven and bake till top is set. about 5 min in 350-400 degree oven
