this savoury potato curry is dry (no gravy), and can be made crispier with more oil.

Recipe Ingredients for potato fry

1 potato, peeled, quartered
1 tsp oil
1/8 tsp mustard seeds
1/8 tsp black beans, mature seeds
1/4 tsp pepper, hot, dried, powdered
1 salt to taste

Recipe Directions for potato fry

  1. par boil the potato with salt.

  2. keep aside.

  3. heat oil in a wok, add mustard and allow mustard to splutter.

  4. add the black bean (urad dal), and saute till bean turns golden brown.

  5. add chillie powder and immediately add the potato.

  6. fry till crisp.
