Recipe Ingredients for Potato Frittata

1 tbsp olive oil
1 medium onion, chopped
8 large eggs
1 tsp italian seasoning
4 medium potatoes, peeled
1 tsp garlic, minced
1/2 cup shredded mozzarella
1/2 cup water
1/2 tsp oregano

Recipe Directions for Potato Frittata

  1. Preheat oven to 350.

  2. Cook potatoes, onion, and garlic in olive oil and water until tender. Add seasonings.

  3. Beat eggs in separate dish. Combine eggs & vegetables.

  4. Bake mixture in 9" pie dish 20-30 minutes, or until set.
