Lower fat Potato frittata. Normally I would use non fat half and half. But didn't have any on hand.

Recipe Ingredients for Potato Frittata

2 serving trader joe's garlic parmesan potatoes
1 cup Egg Beaters
1/4 cup Reduced Fat 4 Cheese Mexican Shredded Cheese
1/4 cup Free Cheese
1/4 cup Reduced Fat 4 Cheese Mexican Shredded Cheese
0.5 cup Cream, Fluid, Half And Half
1 serving Lite Mixture Salt
1 tsp Pepper, Black

Recipe Directions for Potato Frittata

Blend 1/2 & 1/2 w/egg beaters salt and pepper. Put half bag of potatoes in baking dish (oh spray w/pam or something b4). Top with shredded cheese and then egg mixture. Bake at 350 for 35 min.
