Yummy potato dish, great for fall/winter.

Recipe Ingredients for Potato and Fennel Gratin with Gorgonzola and Olives

2 lbs Yukon Gold potatoes
4 1/2 tbsp butter
1/4 cup oil-cured black olives
1 1/4 cup gorgonzola cheese
1 1/2 lbs fennel bulbs
1 teaspoon marjoram
1/2 cup milk
6 oil-cured black olives

Recipe Directions for Potato and Fennel Gratin with Gorgonzola and Olives

  1. Preheat oven to 375 degrees F. Rub inside of 9x9x2 baking pan with garlic clove. Rub pan with 1/2 tbsp butter. Cover bottom with 1/4 of potatoes, overlapping slightly. Sprinkle 1/3 of chopped olives over, then 1/4 of cheese. Top with 1/3 of fennel, sprinkle with salt and pepper and 1/3 of marjoram. Dot with 1 tbsp butter. Repeat layering 2 more times. Top with remaining potatoes, then half of remaining cheese, dot with remaining 1 tbsp of butter. Pour milk over, arrange halved olives atop. Sprinkle with salt and pepper. Cover pan with foil.

  2. Bake gratin until veggies are almost tender, about 50 min. Remove foil, sprinkle with remaining cheese. Bake uncovered until potatoes are tender and golden, about 25 min longer. Let stand 15 min. Serve with Tomato Marjoram sauce.
