Recipe Ingredients for potato egg salad

1 lb new potatoes, peeled and diced
1 small onion, peeled and finely chopped
1 1/2 fl oz low fat mayonnaise
1 1/2 fl oz yoghurt, greek style
1 large egg, hard boiled
1 salt and pepper, season to taste

Recipe Directions for potato egg salad

Boil the potatoes in salted water until just tender, drain and place back in saucepan with lid askew to cool. Once potatoes are cold,add the potato mayonnaise yoghurt egg and onion, into a bowl add and mix well and season to taste with salt and pepper. Cling film and place in the fridge and serve chilled.
