Eggs, tomatoes, and potatoes with feta for breakfast

Recipe Ingredients for Potato Egg Pie

3 eggs
1/2 cup feta cheese
1/2 cup liquid egg whites
1/8 tsp pepper
1/2 tomato, chopped
6 oz french fries
1/2 tbs olive oil

Recipe Directions for Potato Egg Pie

  1. scramble egg in bowl

  2. add liquid egg whites (for cholosterol control), or two additional eggs

  3. heat 1/2 tbs olive oil in frying pan

  4. mix 1/2 cup feta cheese with potatoes (can use leftover french fries from previous meal) or thin sliced whole potatoes

  5. pour egg batter into fry pan to set up

  6. add layer of potatoes and cheese

  7. top with chopped tomato

  8. season with pepper and parmisan cheese (optional)

  9. cover and cook until eggs are set and potatoes cooked through.

  10. Can also top with shredded cheddar cheese, bacon crumbles or sour cream. Very versitale way to use left overs and serve for brunch on Sundays
