Recipe Ingredients for Potato & Egg Breakfast Scramble

1 tsp Margarine, Regular, Hard
0.5 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
1 large Egg, Whole
2 large Egg, White
0.1 cup Cheddar
0.5 cup Spinach

Recipe Directions for Potato & Egg Breakfast Scramble

  1. Saute diced potato in margarine over medium high heat until lightly browned.

  2. Turn down the heat & saute the spinach until wilted.

  3. Add the scrambled egg plus whites and cook through.

  4. Add cheese and any seasonings.
