Makes 2 servings



Scrambled eggs with feta cheese and veggies.

Recipe Ingredients for Potato and Egg Breakfast

2 large Eggs, beaten
1 Salt
1 Pepper
1 tsp Grapeseed Oil
1/2 clove garlic
1/4 c Fingerling Potatoes, diced
1/4 c Onion, diced
1/8 c Red Bell Pepper, sliced
1/8 c Feta Cheese, crumbled

Recipe Directions for Potato and Egg Breakfast

  1. Beat eggs, salt and pepper and set aside.

  2. Heat grapeseed oil in medium fry pan until hot.

  3. Add garlic, potatoes, onion and red bell pepper to pan and cook until potatoes are done.

  4. Add eggs and cook until firm.

  5. Sprinkle with Feta cheese.

  6. Makes two servings (I usually split into containers and user for breakfast or lunch with salad take aways).
