Recipe Ingredients for Potato Curry Soup

4 large (3" to 4-1/4" dia.) Potatoes, Boiled
2 medium Sweetpotato
1 cup Onions
2 cup slices Carrots
2 clove Garlic
2 cup, chopped Broccoli
1 cup pieces Mushrooms
2 cup Spinach
1 cup Soy Milk, Fluid
2 cup (8 fl oz) Water
1 Cube Stock Cubes

Recipe Directions for Potato Curry Soup

  1. In a pan cook onions and garlic over medium heat until the onions go clear. About 5 minutes.

  2. Add water, chicken stock and both potatoes. Bring to a boil.

  3. Add milk, and the rest of the veggies.

  4. Add 1/4 teaspoon of turmeric and 1 full tablespoon of hot curry powder.

  5. Bring to a boil then turn down the heat and let it simmer. The longer it sits the better.
