A curry of potatoes, onions and tomatoes goes well with rice and chappatis.

Recipe Ingredients for Potato curry

1 large potato
1 cup onions, diced
1 cup tomatoes, diced
2 tsp sunflower oil
1/2 tsp mustard seeds
1/2 tsp black gram, dehusked
1 tsp chili powder
1 salt to taste

Recipe Directions for Potato curry

  1. wash, cube and par boil potatoes with salt to taste. keep aside.

  2. heat oil in a wok.

  3. drop the mustard seeds in the oil and allow to splutter.

  4. add the black gram and saute for 30 seconds.

  5. add the onions and saute till brown.

  6. add the tomatoes and saute for a minute.

  7. add a pinch of salt, chillie powder, potatoes and wrap well.

  8. reduce flame, cover pot and cook for five minutes.
