Recipe Ingredients for potato curry with coconut

1 lb potatoes
1 tsp cumin
1/2 tsp fennel seeds
2 dried red chili peppers
1 onion
3 tbsp butter
1 cup water
1/2 tsp curry powder
1 tsp mustard seeds
1/2 tsp turmeric
2 tbsp shredded coconut

Recipe Directions for potato curry with coconut

  1. Toast cumin, fennel seeds, and chili peppers. Add onion and 1T butter - 2-3 min.

  2. Remove from heat and process in a food processor with 2T water.

  3. Melt remaining butter in the same pan and stir fry curry powder and mustard seeds - 30 sec. Stir in spice paste, potatoes, turmeric, coconut and remaining water. Season with salt.

  4. Cover adn simmer until potatoes are tender - 25-30 min. Add more water if sauce dries out.
